All you need is a wok or a large frying pan, some fresh vegetables, and your choice of protein - chicken, beef, tofu, or prawns work great!

Start by heating some oil in your pan and adding your chopped vegetables. You can use anything you have in your fridge - bell peppers, broccoli, carrots, baby corn, and mangetout are all great choices. Fry them on a high heat for a few minutes, then add your protein and cook until it's done. Add in some soy sauce or teriyaki sauce for a flavourful finish. Serve it up on a bed of rice or noodles, and voila! Dinner is served.

Pasta Perfection

Another go-to recipe for me after a long day at work is pasta. It's so versatile and can be ready in under 20 minutes. My favourite is a simple garlic and chilli spaghetti. Start by boiling your pasta according to the packet instructions. In a separate pan, heat some olive oil and gently fry chopped garlic and chilli flakes.

Once the pasta is cooked, drain it and add it to the pan with the garlic and chilli. Toss everything together and add a squeeze of lemon juice for a zesty kick. Finish it off with some freshly grated Parmesan and chopped parsley. It's a simple yet delicious meal that never fails to satisfy!

Comforting Soup

Soup is another easy dinner recipe that's perfect for a chilly evening after work. It's comforting, warming, and can be made in advance - making it a great option for meal prep. Start by sautéing some onions, garlic, and your choice of vegetables. Add in some stock and let it simmer until the vegetables are tender.

Once cooked, blend the soup until it's smooth and creamy. Season with salt, pepper, and any herbs or spices you like. I love adding a bit of cream or coconut milk for an extra luxurious touch. Serve with a crusty roll for a satisfying dinner.

For a fun and interactive dinner, why not make some tacos? They're quick, easy, and can be customised to suit everyone's tastes. Start by cooking your choice of protein - minced beef, chicken, or beans all work well. Add in some taco seasoning and let it cook until it's well coated and delicious.

While your protein is cooking, prepare your taco fillings. You can use anything you like - shredded lettuce, diced tomatoes, chopped onions, grated cheese, sour cream, and guacamole are all tasty options. Once everything is ready, assemble your tacos and enjoy!
